Grace Hominy Corn

A classic Jamaican treat used to make porridge with chewy, delicious bits. You cook this corn as you would dried beans. It’s also used in other cultures as American grits, thickener for stews and Latino tortillas and tamales.

Hominy is a food produced from dried maizekernels that have been treated with an alkali, in a process called nixtamalization (nextamalli is the Nahuatl word for “hominy”). “Lye hominy” is a type of hominy made with lye.
